Overview
One of nature's most extraordinary migrants, the European eel travels some 5,000 kilometres from continental rivers to the Sargasso Sea to spawn and die. Its transparent larvae drift back to Europe and North Africa on the Gulf Stream, entering fresh water as yellow-olive yellow eels before maturing into silvery, large-eyed silver eels for the return journey. Adults occupy rivers, lakes, and coastal waters from Iceland and Norway to the Mediterranean and Morocco, growing to about 1.3 metres. Its rich, fatty flesh is traditionally smoked, jellied, or grilled kabayaki-style, but stocks have fallen roughly 90 percent, and the species is now Critically Endangered, so consumption is strongly discouraged.

Coloration
