A schooling fish of North American lakes and slow rivers, the yellow perch is unmistakable in its golden-yellow body crossed by six to eight dark olive saddle-bars, with vivid orange lower fins. Native to fresh and slightly brackish waters of central and eastern Canada and the northern United States, it is abundant in Lake Erie and Lake Winnipeg and has been introduced westward. It grows to about 50 centimetres and forms large shoals that make it a mainstay of Great Lakes fisheries. Its sweet, firm, very lean white flesh is among the most prized of freshwater table fishes, best simply pan-fried. Common and widespread, the species is assessed as Least Concern.
