Intense, deep-red flesh with a full, robust salmon flavor and high omega-3 content. Excellent grilled, smoked, or canned; its bold flavor stands up to strong seasonings and wood smoke.
Cardeau d'été
Thin, delicate white fillets with a sweet, mild flavor and very low fat. Prized on the U.S. East Coast; superb pan-fried in butter, stuffed and baked, or prepared as ceviche.

Saumon rouge
The sockeye salmon is famous for turning bright red during its upstream spawning migration. Its deep-red flesh is the richest in omega-3 fatty acids of all Pacific salmon species, making it the most valuable commercially.
Cardeau d'été
The summer flounder, or fluke, is a flatfish that lies camouflaged on the ocean floor. Born with eyes on both sides, one eye migrates to the left side during development. An ambush predator, it explodes upward to grab passing prey.
