Renk Eyed side is olive-brown to dark greenish-brown with mottled paler blotches providing camouflage; blind underside is pure white; lateral line distinctly arched over the pectoral fin. Yellow-olive to olive-brown back and sides in the freshwater 'yellow eel' phase; maturing 'silver eel' phase develops a dark gray-black back with a silvery-white belly and enlarged eyes.

Firm, meaty white flesh with a mild, sweet flavor and very low fat. Endangered status — sustainable sourcing essential; superb pan-seared, poached in butter, or roasted with aromatics.

European Eel

Rich, fatty flesh with a distinctive earthy flavor; classically smoked, jellied (in Britain), or grilled kabayaki-style. Critically Endangered — consumption strongly discouraged; population down 90%.

Species Overview

Atlantic Halibut

The Atlantic halibut is the largest flatfish in the world, capable of exceeding 300 kg. Both eyes are on the right side of its body. It is a slow-growing, long-lived species that has suffered severe overfishing.

European Eel

The European eel undertakes one of nature's most remarkable migrations, traveling 5,000 km from European rivers to the Sargasso Sea to spawn and die. Despite centuries of study, its breeding grounds were only recently confirmed.
