Smallmouth Bass
Clean, white, mildly flavored flesh with low fat; considered slightly firmer and more flavorful than largemouth bass. Excellent pan-fried or baked; a respected table fish in the Great Lakes region.
Zander
Lean, firm white flesh with a delicate, mild flavor and nearly no fat; boneless fillets are easy to work with. The most prized freshwater eating fish in Central and Eastern Europe.
Species Overview
Smallmouth Bass
The smallmouth bass is widely considered the best-fighting freshwater fish pound-for-pound. Found in clear, rocky streams and lakes, it is more athletic and acrobatic than its larger cousin, the largemouth bass.
Zander
The zander is the European equivalent of the walleye and one of the most prized freshwater predators in Europe. Its excellent low-light vision makes it a crepuscular hunter. Its delicate white flesh is considered among the finest of freshwater fish.
