Abstract

Among the most vividly coloured pelagic fishes, the mahi-mahi, also called dorado or dolphinfish, flickers electric blue, green, and gold in life before fading to dull gray at death. Males develop a blunt, squared-off forehead, and the species reaches over two metres in warm oceanic waters worldwide. It gathers around floating sargassum mats, current lines, and thermocline boundaries, where it hunts in fast, energetic bursts. Remarkably fast-growing, it rarely lives beyond five years yet supports major sport and commercial fisheries. Its firm, slightly sweet, large-flaked flesh is a favourite grilled, blackened, or in tacos, and the species is assessed as Least Concern.
