Overview
An armoured, ancient survivor, the European sturgeon can live more than a century and reach six metres, its body ridged with five rows of bony scutes and tipped by a shark-like heterocercal tail. Once ranging across European coasts from the Baltic to the Mediterranean and Black seas, spawning in great rivers such as the Rhine, Elbe, and Gironde, it is now virtually confined to the Gironde and Garonne system. Anadromous and slow to mature, it was historically prized for delicate flesh and beluga-grade caviar, pressures that helped drive its collapse. Assessed as Critically Endangered, the species is legally protected and cannot be harvested anywhere in its range.

El esturión europeo es un pez anádromo en peligro crítico de extinción que puede vivir más de 100 años. Antaño abundante en los ríos europeos, ahora está restringido a una pequeña población en el estuario del Gironda. Sus huevas se cosechan como caviar de calidad beluga.

Coloration
Dorso gris-marrón a negro parduzco oscuro con 5 filas de escudos óseos de color blanco amarillento; los costados son de un marrón grisáceo pálido a blanquecino; el vientre es blanco cremoso; cuerpo grueso y acorazado con una cola heterocerca similar a la de un tiburón.

Históricamente distribuido por aguas costeras europeas, desde el mar del Norte y el Báltico hasta el Mediterráneo y el mar Negro, desovando en grandes ríos como el Rin, el Elba y el Gironda. En peligro crítico; casi exclusivamente restringido al sistema Gironda-Garona.
