Abstract

Domesticated in East Asia more than two thousand years ago, the common carp is now among the most widely introduced freshwater fishes on Earth. Native to the Danube and Caspian drainages, it bears large golden-bronze scales with a faint reticulated edging and tolerates turbid, warm, low-oxygen water over silty bottoms. It reaches 1.2 metres and 40 kilograms and is the principal quarry of European coarse anglers as well as a globally important aquaculture species. Its dense, moderately fatty, earthy flesh improves greatly from clean, cold water and features in Central European traditions from braising to gefilte fish. Despite its abundance where introduced, the wild species is assessed as Vulnerable, and coarse anglers target it with boilies, corn, and dough baits.
