Overview

Distinguished by seven or eight dark horizontal stripes along silvery flanks, the striped bass is an anadromous fish of the North American Atlantic coast. It spawns in freshwater rivers such as the Hudson and the Chesapeake tributaries, then ranges seasonally along the coast, supporting prized fishing from surf, boat, and shore. Reaching two metres and 57 kilograms, it is a powerful, sought-after game fish that migrates in large schools. Its sweet, tender white flesh carries moderate fat and a clean ocean flavour, superb roasted whole or pan-seared. Once severely depleted and since recovered under strict management, the species is assessed as Least Concern.
